I’ve been consistently obsessed with these for over the past two years. As a kid, I never seemed to like any kind of meat. I don’t even like the plant-based alternatives. 😅

Family and friend events were difficult to attend because my only options were chips, raw fruit, and veggies. 🤣 Or I ate before I attended those events. Luckily, my friends and family understand that I’m not a big fan of meat, so they’ve been wonderful enough to let me bring my own food to prepare. I always go with the cauliflower street taco route because it’s easy, quick, and delicious! The smell grabs others’ attention and they get curious to the point where they’re asking for a sample. To which I’m always quick to say “HELL YES”! 🥰

At this point, I know now to bring a whole lot more ingredients jussst in case! 😉

Wanna know how I make them? 

You’ll need

• One head of cauliflower (frozen works too)

• Corn tortillas warmed up

• Carnita seasoning (I like to use Concord Fresh Success carnita seasoning packets! This is what they look like ➡️ Concord Foods Street Taco Seasoning

• Your favorite taco toppings (Cilantro, onion, avocado, salsa, lime, etc)

How to prepare and cook

Step one: Chop up your cauliflower. You can chop it up however you like. I prefer to have bigger pieces.

Step two: In a medium skillet, heat up half a tablespoon of oil on medium heat. After a few minutes, you can toss your cauliflower in. Turn down the heat to low-medium heat.

Step three: While the cauliflower is cooking, prepare your toppings. Cut your onions, cilantro, limes, etc. Make sure you’re checking on your cauliflower and stirring it every now and then so that it doesn’t burn.

Step four: Add in your carnita seasoning and mix well. Cook for an extra five minutes. Then remove from heat. 

Step five: Grab yourself a plate! Warm up your tortillas and place them on your plate. Add your cauliflower, and desired toppings. 

Step six: ENJOY! 🤤🤤🤤
